– olive oil
– 1 tin of butter beans, drained and rinsed
– 4 T basil pesto, homemade or shop bought
– 3 handfuls of baby spinach, rinsed
– pumpkin seeds, toasted
– pomegranate seeds (optional)
Place all the ingredients except the pumpkin seeds and pomegranate seeds into a medium-sized frying pan. Saute for 2 – 3 minutes and enjoy.
