Carrot, Orange and Pecan Loaf

Gluten free • Sugar free • dairy-free

Ingredients:
– 2 C gluten-free flour
– 2 T cinnamon
– 2 t allspice
– 1/2 t ginger
– 1/2 t nutmeg
– 1 t baking powder
– 1/2 t bicarb
– 1/4 t salt
– 4 eggs
– 6 T coconut oil, melted
– the zest and juice of 2 oranges
– 2 C grated carrots
– 50-100 g pecan nuts, toasted
– 50 g of chopped dates

Method:

1. Preheat the oven to 180° C and line a loaf tin with baking paper.
2. Combine of flour, spices, raising agents and salt together in a mixing bowl.
3. In a separate bowl, combine the eggs, coconut oil and orange zest and juice.
4. Add the liquid mixture to the dry mixture and mix until well combined and a smooth batter forms.
5. Fold in the carrot and pecans until evenly incorporated then pour batter into your prepped loaf tin.
6. Bake the loaf for between 40-50 minutes, then wait until the loaf has cooled completely before slicing
